Shot in the Dark Smokin’ Hot Chicken Wings
Ingredients
3 lbs chicken wings (flats and drumettes)
2 T olive oil
4 T Shot in the Dark Smokin Hot Rub
2 C canola or vegetable oil
Directions
1. Preheat smoker at 225 degrees F with desired wood flavor for smoke.
2. In a large zip top bag, combine wings, olive oil and rub. Can be done overnight and refrigerated.
3. Remove wings from bag and place wings on smoker. Cook until the internal temperature is 145 degrees F.
4. Preheat the canola/vegetable oil in a cast iron skillet until the oil is 375 degrees F.
5. Transfer the wings from the smoker to the hot oil. Working in batches so the wings do not overlap and the oil temperature does not drop too much.
6. Fry 2-3 minutes per side, flipping regularly. Fry until the internal temperature is 175 degrees F.
7. Remove wings from skillet and sprinkle additional rub on before serving.
